Instructions: Peel and finely slice the onions. Heat the oil in a heavy based pan and cook the onions over a low heat for 10 minutes until soft.
Add the sugar and cook until golden brown in colour, about 20 minutes. Add the sherry and vinegar and continue to cook until mixture is transparent. Ladle into sterilised jars and seal. Delicious with hot and cold meats. Keeps for 3-4 months. Ensure storage jars are well sterilised. Email this Recipe:
