1 cup unbleached flour
1/2 cup whole wheat flour
1/2 cup brown rice flour
1/4 cup sugar
2 tsp baking powder
1/4 cup honey or brown rice syrup
3 x egg whites
1 tsp vanilla extract
1/3 cup finely chopped dried apricots
Instructions:
Instructions: Combine the flours, sugar, and baking powder, and stir to mix well. Add the remaining ingredients, and stir just until the dough holds together. Turn the dough onto a lightly floured surface, and shape into 2 9X2-inch logs. Coat a baking sheet with nonstick cooking spray, and place the logs on the sheet. Bake at 350F for 18 to 20 minutes or until lightly browned.

Cool the logs at room temperature for 10 minutes. Then use a serrated knife to slice the logs diagonally into 1/2-inch-thick slices. Place the slices on an ungreased baking sheet in a single layer, cut side down. Bake at 350F for 18 to 20 minutes, or until dry and crisp, turning the slices over after 10 minutes.

Transfer the biscotti to wire racks and cool completely. Serve immediately or store in an airtight container.

Makes 24 biscotti.
