1 cup rice, brown
6 x spring onions
1/2 cup corn kernels
1 x red capsicum
1/3 cup currants
60 gm cashew nuts, roasted
2 tbl sunflower seeds
----------------- DRESSING: ----------------
1/4 cup vegetable oil
1 tsp sesame oil
1 tbl soy sauce
1 tbl lemon juice
1 tsp garlic, crushed
1 tsp ginger, crushed
1/2 tsp honey
1/10 tsp chilli paste
Instructions:
Instructions: Dressing:
Put all ingredients in a screw topped jar and shake well to blend before using.

Cook the rice in boiling salted water for 30-40 minutes until tender. Rinse and drain well.

Chop the spring onions and capsicum fine.

Transfer the rice to a bowl while still warm and add the spring onions and remaining ingredients. Toss thoroughly and transfer to a serving dish.

Serves 6-8.
