Weigh Less", although they are attributed to other sources as youll see. A good basic vegetable stock with intense flavor. Makes 4 cups Preheat the oven to 450 degrees. Roast the vegetables in a heavy baking pan for 1 hour, uncovered, stirring occasionally. Transfer to a stockpot, cover with 2 quarts water, bring to a boil, then simmer covered for 1 hour. Strain.
