Instructions: Spray a nonstick skillet with Pam. Heat and saute onion until almost translucent. Add garlic and stir until fragrant. Add spices, stirring until fragrant. Add rice beans and corn. Stir to combine and heat. Add salsa and sour cream. Heat and taste. Adjust seasoning, adding salt as needed. To serve, fill heated tortillas generously and top with sour cream, salsa, cheese, green onions, red bell peppers and tomatoes as desired.
Note: If using regular black beans drain and rinse before adding to recipe. You may need to add a bit of chicken stock to make up for the lost bean juice. We thought this was very good but Id like it a bit saucier. Next time Ill probably just add a packet of reduced sodium taco seasoning and some tomato sauce instead of the chili and cumin powder the recipe calls for. I moistened mine with some of the refried bean soup. Hubby used salsa. We both thought our way was best. This makes a ton. Serving Ideas : Serve with refried bean soup and tossed salad.
