4 med ripe peaches (about 1 1/2 lbs.)
2 tbl butter or margarine
1 ct nonfat vanilla yogurt (8 ounces)
2 tbl finely chopped crystallized ginger divided
Instructions:
Instructions: Step 1: Cut peaches in half. Remove the pits and slice the peaches. In a large skillet, melt butter over moderate heat. Add the peach slices and saute until softened, about 5 minutes.

Step 2: Stir yogurt and 1 tablespoon crystallized ginger into the peaches until well mixed and just warmed. Remove the skillet from the heat. Place the warm peaches and yogurt in small bowls; sprinkle each serving with an equal amount of the remaining crystallized ginger; garnish with mint sprigs, if desired, and serve.

NOTES : A light and refreshing breakfast idea.
