Instructions: Step 1: In a 10-inch nonstick skillet, melt the butter over moderate heat. Add half of the Canadian-style bacon and cook for 1 minute on each side or until lightly browned. Remove bacon. Repeat with remaining bacon. Return all of the bacon to the skillet.
Step 2: Meanwhile, in a small bowl, combine the honey, orange juice, orange rind, mustard, and pepper. Pour over bacon. Bring just to a boil. Lower the heat slightly and cook, uncovered, for 5 minutes or until the honey mixture is of glaze consistency. Step 3: Transfer bacon to plate. Spoon honey mixture on top. Serve with hot cooked rice. NOTE: Made from smoked pork loin, Canadian-style bacon is closer in taste and texture to ham than bacon. You can purchase it presliced, but for best results, buy a chunk from the butcher and cut it yourself. Makes 4 servings. Email this Recipe:
