1/2 lb baby red potatoes
1 tbl chopped fresh garlic - (to 2)
2/3 cup freshly-grated Romano cheese
(Pecarino is better if you can find it)
1/4 lb butter (no substitutes)
1/2 tsp dried leaf oregano
1/2 tsp salt
Half-and-half or milk added depending on
Instructions:
Instructions: Wash potatoes and remove bad spots (get rid of green spots!). Place potatoes in a 4 1/2-quart pan; cover with cold water and bring to a boil, till done. Drain and place immediately in 3 quart bowl.

Combine with all the remaining ingredients, except half-and-half and mix well using a wire whisk. Slowly add half-and-half until desired consistency is reached. Adjust flavors and seasoning and place in a 250 degree oven until ready to serve.
