Ingredients:

125 gm Sundried tomatoes in oil, drained (4oz)
1 x 397 gram can chopped tomatoes
1 tbl White wine vinegar
1/4 tsp Chilli powder, up to 1/2, up to
3 tbl Freshly chopped parsley
Salt and freshly ground black pepper
250 gm Bucatini, (8oz)
1 tbl Olive oil
1 x Onion, chopped
Instructions:
Instructions: 1. Place the tomatoes, vinegar, chilli, most of the parsley and seasoning to taste in a blender or food processor and blend until smooth.

2. Cook the bucatini following instructions on the pack.

3. Meanwhile, heat the oil and fry the onion and bacon for 5-6 minutes, stirring occasionally, until golden.

4. Add the cooked bucatini and tomato mixture, heat through and transfer to a warmed serving dish. Sprinkle with the remaining parsley and serve immediately.

NOTES : The classic combination of Italian ingredients gives the dish a truly Mediterranean feel.
