one 9 inch pie shell
(double the recipe for two 9 inch pie crusts)
1/2 cup sifted all-purpose flour
1/4 tsp salt
3/4 cup unsalted butter, chilled and cut into pieces
Instructions:
Instructions: Sift together the flour and salt. using a pastry blender, cut the butter into the flour until the mixture has the texture of cornmeal. Add the water, 1 tablespoon at a time, while tossing the mixture with a fork. Add only enough water to make the dough particles stick together. Press the dough into a ball.

Wrap in waxed paper and chill until ready to use. Best if chilled at least 30 minutes before rolling.
