1 cup sweet butter softened
1 cup sugar
2 x eggs one separated
3 cup all-purpose flour
1 tsp salt
1 tsp rum or almond flavoring
1 cup chopped toasted blanched almonds
Instructions:
Instructions: Preheat oven to 375 degreesa Thoroughly grease cookie sheets. Cream butter with 1/2 cup sugar. Add egg and egg yolk and beat until fluffy. Sift flour and salt together and add to butter mixture. Add flavoring. Mix the chopped nuts, the remaining sugar, and cinnamon. Set aside. To shape cookies, measure cup dough at a time and roll on a slightly floured board to a cylinder about 1 " long and 1/2" in diameter. Brush each cylinder with egg white and roll in the nut mixture. Place on cookie sheets and bake for 15 minutes. As soon as you remove cookies from oven, cut into 2" lengths.
