Instructions: Blend first three ingredients together and set aside. Cream butter and gradually add brown sugar, creaming well. Blend in egg, vanilla and rum extract. Sift flour and baking powder together and add to creamed mixture, blend well. Add the pecan mixture and stir just until evenly distributed in dough*. Shape into balls, using a rounded teaspoonful for each. Place on greased baking sheets; flatten slightly with hand. Bake in moderate oven 375 degrees for 10 - 12 minutes or lightly golden brown. Cool and frost thinly with Milk Chocolate Frosting.
*Chill Dough for 1 - 2 hours for easy handling. Milk Chocolate Frosting: Melt 1/2 cup semi-sweet chocolate pieces over hot water. Blend in 1/4 cup sweetened condensed milk. Thin with few drops of cream if necessary. Email this Recipe:
