1 tsp	Fresh lime zest
	Salt to taste
	Crushed dried red chile to
	Taste
1/4 lb	Untalted butter (1 stick)

Instructions:

Instructions: To make each sauce, mix all the
ingredients together well. Melt to serve. SPICY CILANTRO BUTTER
