Instructions: Remove stems from spinach, wash 3 times in cold water to remove any traces of dirt. Drain well and spread onto a teatowel to dry.

Heat butter in a pan, when it begins to sizzle, add the bacon and saute 1-2 minutes until bacon starts to take on some colour. Add spinach and seasonings, quickly toss until just wilted. Remove spinach and bacon to a colander to drain any excess liquid away.

Arrange on plate and serve immediately.

Cook the spinach just before serving.

Goes well with just about any meat or seafood dish.
