Instructions: Heat milk, remove, and temper in buttermilk. Add yeast and sugar. Pour mixture into mixing bowl. Add all dry ingredients and mix on low with dough hook until combined. Remove dough and place into greased plastic container, cover, and put in warm dry place for 30 minutes.
Remove dough onto floured surface, tuck creases underneath, and form into a ball. Roll out and cut dough into 1 1/2 inch squares. Put beignets on greased parchment and cover with additional greased parchment. Wrap with film and store in walk-in. Fry in peanut oil at 3750. Email this Recipe:
