Preheat oven to 450 degrees. Grease baking

Instructions:
Instructions: In mixing bowl, stir together flour, baking powder and salt. Drop pieces of chilled lard into flour. Using pastry cutter or 2 knives, cut lard into flour. (Note: Dont use fingers; you would smear lard into flour rather than leaving tiny crumbs intact. If using mixer, use flat beater blade to break lard into flour.) Dont overmix. Pour buttermilk into bowl. Stir with a wooden spoon or spatula to draw in all ingredients. Stir in cheese. A tablespoon of dough should clump like cottage cheese. If mix is dry, add 1 or 2 teaspoons buttermilk; if too wet, add 1 or 2 teaspoons flour.

To bake biscuits: Drop dough from tablespoon, pushed off with spatula, onto prepared baking sheet. (Note: For crispy biscuit overall, leave room between biscuits so they dont touch.) Place baking sheet in middle shelf of hot oven. Bake for 20 minutes, or until nicely browned and hard when tapped with fingernail.
