1 cup yellow cornmeal
1 cup unbleached all-purpose flour
2 tsp baking powder
1 tsp baking soda
2 x eggs beaten
3/4 cup low-fat buttermilk
1/4 cup honey
Instructions:
Instructions: Preheat the oven to 375 degrees. In a large bowl, combine the cornmeal, flour, baking powder and soda.

Combine the remaining ingredients and add slowly to the dry ingredients. Mix until blended. Pour into non-stick muffin cups, making them about two-thirds full.

Bake until golden about 20 to 25 minutes. Remove the muffins from the pan and cool completely.

This recipe yields 12 muffins.

Serving size: 1 muffin.
