2 cup self-rising flour
2 cup self-rising white cornmeal
1 tsp sugar
1/2 tsp salt
1/2 tsp freshly-ground black pepper
1 lrg onion grated
1 x jalapeno pepper (optional), seeded,
and minced
2 cup buttermilk
1 lrg egg
Instructions:
Instructions: Combine first 5 ingredients; stir in onion, and if desired jalapeno pepper. Whisk together buttermilk and egg; add to flour mixture.

Pour oil to a depth of 3 inches in a Dutch oven; heat to 375 degrees. Drop batter by level tablespoonfuls into oil; fry, in batches, 5 to 7 minutes or until golden. Drain on paper towels.

This recipe yields 5 dozen.
