Instructions: Generously butter 18 large muffin tins. Place on rack in center of oven.
Preheat oven to 400 degrees. Blend oats, buttermilk and vanilla in a medium bowl and set aside. Combine egg and brown sugar in large bowl; blend well. Add butter and beat for 1 minute. Add buttermilk mixture and blend in well. Add dry ingredients and blend until flour is just incorporated; do not overmix. Fold in berries. Fill muffin tins half full; bake until muffins are lightly browned, about 15 to 20 minutes. Turn out onto rack to cool. Makes 18 muffins. Email this Recipe:
