Ingredients:

1 cup plus 2 tablespoons rolled oats
1 cup buttermilk
1 tbl vanilla
1 cup flour
1 tbl baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp nutmeg
1/4 cup walnuts, finely chopped, optional
1 x egg
3/4 cup light brown sugar, firmly packed
1/4 cup unsalted butter, softened
Instructions:
Instructions: Generously butter 18 large muffin tins. Place on rack in center of oven.

Preheat oven to 400 degrees. Blend oats, buttermilk and vanilla in a medium bowl and set aside. Combine egg and brown sugar in large bowl; blend well.

Add butter and beat for 1 minute. Add buttermilk mixture and blend in well.

Add dry ingredients and blend until flour is just incorporated; do not overmix. Fold in berries. Fill muffin tins half full; bake until muffins are lightly browned, about 15 to 20 minutes. Turn out onto rack to cool.

Makes
18 muffins.
