2 lb butternut squash
1 med onion, finely chopped about 1 cup
1/2 tsp salt, or to taste
1/4 tsp ground white pepper
2 tbl butter, melted
2 x eggs
3/4 cup milk
Instructions:
Instructions: Peel squash with vegetable peeler or paring knife and discard outer skin. Halve squash lengthwise and cut into thin slices. Place slices in work bowl along with onions, salt, pepper, and melted butter. Toss well. Spoon mixture into buttered 9-inch round or square baking dish.

Bake, covered, at 375F. for 30 minutes.

Meanwhile, beat together eggs, milk and cheese. Remove cover from baking dish and pour in cheese mixture. Gently mix to distribute evenly. Bake until golden brown, about 20 minutes longer.
