Instructions: Heat butter in a large saucepan over medium heat until melted.
Add onion, celery and garlic. Cook for about 5 minutes, or until the onion is tender, stirring occasionally. Add barley and continue cooking about 5 minutes, or until the barley is golden, stirring constantly. Add chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 35 minutes. Stir in cranberries and honey. Simmer for 10 minutes, or until the barley is tender. Remove from the heat and let stand covered for 5 minutes. Stir in pecans and serve. Servings: 6 Email this Recipe:
