Instructions: Spray a large skillet with nonstick cooking spray and place over medium-high heat. Add beef and garlic; cook 3 minutes, or until beef is browned, stirring constantly. Transfer beef to a plate and set aside.
Spray skillet again and add onion. Cook 1 minute, stirring constantly. Add coleslaw, broth, caraway seeds, and black pepper. Bring the mixture to a boil. Reduce heat to medium-low and stir in barley. Cover and simmer 10 to 12 minutes, or until barley is tender and liquid is absorbed. Serve immediately. This recipe yields 6 servings. Comments: Thanks to instant barley, which cooks up in about 10 minutes, this one-dish meal can be on the table in less than half an hour. If you cant find ready-cut beef for stir-fry, slice bracciole or "minute" steaks into 1/2-inch-wide strips instead. You can also substitute lean ground beef. If you want to use up those caraway seeds, add them to potato salad, coleslaw, homemade breads and rolls, buttered noodles, and cheese dishes. Email this Recipe:
