1 tsp canola oil
6 oz green cabbage shredded (1 1/2 cups)
1 cup onion chopped
1 sm granny smith apple pared and chopped
3 cup vegetable broth
1 sm garlic clove minced
1 tsp ginger root finely chopped
1/2 tsp granulated sugar
freshly black pepper to taste
Instructions:
Instructions: Cook cabbage, onions, and apple in oil over medium heat. Cover and simmer 10 minutes, stirring occasionally.

Add broth and garlic; bring to a boil over high heat. Reduce heat to low cover and simmer until cabbage is tender, about 10 minutes.

Puree half of the solids until smooth. Return o saucepan and add ginger, sugar, and pepper. Bring to a boil Divide evenly among 4 bowls; garnish with red apple.

NOTES : Serve this unusual soup hot or cold, with pumpernickel bread, if desired. The recipe can be doubled.

If serving cold, puree all of soup. Cover and refrigerate until chilled. Garnish and serve.
