2 tbl vegetable oil
2 lb ground round or ground chuck
1 lb ground pork sausage
1 x green bell pepper seeded, thin sliced
3 x garlic cloves peeled and minced
1 med onion thinly sliced
2 x carrots diced
1 cup diced celery
16 oz canned tomato sauce
2 x bay leaves cracked
1 tsp Tabasco sauce or to taste
1 cup chopped cured black olives
15 oz canned black beans drained and rinsed
17 oz canned whole kernel corn
1/2 cup water
1/2 cup shredded sharp Cheddar cheese
3/4 cup shredded queso blanco (or Monterey Jack)
Instructions:
Instructions: Heat a large skillet or saute pan and add the oil. When oil is heated and begins to smell fragrant, add the ground round and pork sausage, then the green pepper, garlic, onion, carrots, and celery. Cook until meat is browned and cooked through. Drain off excess oil.

Preheat the oven to 350F.

To the prepared mixture, add the tomato sauce, bay leaves, Tabasco, olives, black beans, corn, water, and Cheddar cheese and combine well. Top with queso blanco. Pour into a 2-quart ovenproof dish. Sprinkle with paprika and bake uncovered for about 30 minutes.
