1/4 cup all-purpose flour
1/2 tsp salt
2 tsp ground cinnamon
1/4 tsp ground ginger
1 cup packed brown sugar
3/4 cup granulated sugar
3/4 cup corn oil
1 cup chopped walnuts or pecans
1 tsp baking soda
1 tsp baking powder
1 x egg beaten
Instructions:
Instructions: STEP 1: Make the Batter and the Topping Mix Mix together in a large bowl the flour, salt, 1 teaspoon of the cinnamon, ginger, both sugars and the corn oil. Remove 3/4 cup of this mixture to a smaller bowl, and add to it the walnuts or pecans and an additional 1 teaspoon cinnamon. Mix well, and set aside.

STEP 2: Complete the Batter
To the remaining batter, add baking soda, baking powder, egg and buttermilk. Mix to combine all ingredients. (small lumps in the batter are OK).

STEP 3: Bake
Pour the batter into a well-greased 9x13x2" pan. Sprinkle the topping mixture evenly over the surface.. Bake for 40 to 45 minutes, or until the cake tests done (a cake tester inserted in the middle will come out free of raw batter). Serve warm.

For a generation that purports to be as health conscious as ours, its got everything going against it....Its easy to whip together. You can make the first part the night before, and then finish it up in the morning, and have a fresh, warm cake for breakfast or brunch
