Instructions: To make chili: In large stockpot, warm olive oil over medium heat. Saute chicken until cooked. Add onions. Reduce heat. Cook for 5 minutes, or until onions are tender. Add pepper flakes, garlic, jalapenos, chicken stock, chili powder, tomatoes and tomato puree, kidney beans and garbanzo beans. Simmer for 15 to 20 minutes.
To serve: Add chopped cilantro and lime juice. Taste. Adjust seasonings. Top with sour cream, chopped red onion, grated cheddar cheese and corn chips. Serve immediately. Email this Recipe:
