3 tbl olive oil
1 lb boneless skinless chicken breast cut in 1" pieces
1/2 cup chopped yellow onion
1/2 tsp crushed red chile pepper flakes
1 tbl minced fresh garlic
2 tsp minced fresh jalapeno chile peppers
1/2 cup chicken stock
3 tbl chile powder
1 x 28 ounce can whole tomatoes undrained, broken up
1 x 29 ounce can tomato puree
2 x 15 ounce cans dark red kidney beans drained
1 x 15 ounce can garbanzo beans drained
1/3 cup chopped fresh cilantro
2 tbl freshly squeezed lime juice

Instructions:
Instructions: To make chili: In large stockpot, warm olive oil over medium heat. Saute chicken until cooked. Add onions. Reduce heat. Cook for 5 minutes, or until onions are tender. Add pepper flakes, garlic, jalapenos, chicken stock, chili powder, tomatoes and tomato puree, kidney beans and garbanzo beans. Simmer for 15 to 20 minutes.

To serve: Add chopped cilantro and lime juice. Taste. Adjust seasonings. Top with sour cream, chopped red onion, grated cheddar cheese and corn chips. Serve immediately.
