3/4 cup raisin bran
2 cup milk
1/3 cup molasses
1/2 cup vegetable oil
2 x eggs slightly beaten
1/2 cup flour (to 2 cups)
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
Instructions:
Instructions: Soak raisin bran in milk for 20 minutes. Stir.

Preheat oven to 400 degrees. Line muffin pan with muffin papers.

Add molasses, vegetable oil and eggs to raisin bran mixture, and mix with a wooden spoon until thoroughly moist but not beaten.

In a medium bowl, sift together flour, baking powder, salt and baking soda. Mix with raisin bran mixture. Add sugar. Mix well.

Fill muffin cups 3/4 full. Bake for 20 to 25 minutes or until toothpick inserted in center of muffin comes out clean.

Makes 16 muffins.
