2 lb beef chuck cut 1" cubes
2 tbl vegetable oil
2 tbl flour
2 med onions sliced
16 oz canned tomatoes undrained
2 x carrots pared, sliced thin
1 lrg potato pared, sliced
1 tsp salt
1 tsp dry thyme leaves
1/4 tsp Tabasco pepper sauce
Instructions:
Instructions: In a large saucepan or Dutch oven brown meat in oil. Sprinkle with flour and mix well. Add onions and cook 5 minutes. Add tomatoes, carrots, potato, salt, thyme, Tabasco sauce and bay leaf. Cover and simmer 1 1/2 hours or until meat and vegetables are tender, stirring occasionally. Remove bay leaf before serving.

This recipe yields 6 servings.

Comments: Add a little hot water while cooking if stew seems dry.
