1 sm onion chopped
1/4 cup chopped green bell pepper
1 tbl olive oil (1 to 2)
3 cup frozen shoepeg corn thawed
2 x plum tomatoes diced
1/4 lb andouille sausage cooked, diced
1/4 cup chopped green onion tops
1/4 tsp salt
Instructions:
Instructions: Saute onion and bell pepper in hot oil in a large skillet over medium heat 8 minutes or until tender. Add corn, tomato, and sausage; cook, stirring often, 15 minutes.

Stir in green onions, salt, and pepper; cook 5 minutes

This recipe yields 6 servings.

Comments: Maque choux (or mock cabbage) is a dish Georgette Dugas grew up making and eating in South Louisiana. She added her own touches, including andouille sausage. "Its not exactly the way my mother made it," she says, "but I thank her for the basics."
