1 med celery stalk cut into pieces
1 sm red pepper seeded and chopped
1/2 med onion quartered
1 lrg garlic clove quartered
1/2 cup bread crumbs
2 lrg egg whites lightly beaten
1 tsp Dijon mustard
1/2 tsp paprika
1/2 tsp cayenne pepper
Instructions:
Instructions: Preheat oven to 350. Coat a baking sheet lightly with cooking spray and set aside. Combine celery, bell pepper, onion and garlic in a food processor and process until finely chopped but not pureed.

Transfer mixture to a mixing bowl. Add bread crumbs, inch high, and place patties on prepared baking sheet.

Bake in upper third of over for 20 minutes, turn cakes and bake an additional 15 minutes or until golden and slightly crispy outside. Serve 2 cakes per person.
