Ingredients:
Amount Ingredient
2 oz mixed Cajun spices (paprika onion salt sugar chilli celery pepper garlic thyme oregano basil bayleaf or use a premixed spice selection)
2 oz American peanuts chopped
1 lb firm white fish fillets (e.g. grey mullet cod haddock)
----------------- To garnish: ----------------
1 x red pepper deseeded and sliced
1 x green pepper deseeded and sliced
few sprigs of parsley
1 x tablespn freshly chopped parsley
Instructions:
Instructions: In a small bowl mix togelher the spices and peanuts with enough cold water to form a smooth but not too runny paste.

Cut the fish fillets into 2in slices and dip each into the spice mixture to thoroughly coat.

Place on a grill pan lined with foil and cook under a pre heated medium grill for six to eight minutes turning over half way through cooking time.

Spoon the cooked fish pieces onto a serving plate and garnish with the red and green pepper slices and sprigs of parsley.

Sprinkle with freshly chopped parsley and chopped peanuts.

Serve immediately.
