4 x russet potatoes baked
1/2 cup finely shredded Cheddar cheese
1/2 cup finely shredded Swiss cheese
1/8 tsp cayenne pepper
1/8 tsp paprika
4 slc crisp-fried bacon crumbled
1/2 cup sliced green onions
Instructions:
Instructions: 1. Preheat broiler. Cut potatoes lengthwise into quarters. Scoop out 1/3 of the pulp; reserve for another purpose.

2. Place potatoes on broiler pan or baking sheet. Broil 4 inches from heat source for 8 minutes, or until golden.

3. Sprinkle potatoes with Cheddar, Swiss, cayenne pepper, paprika, and bacon.

4. Sprinkle with green onions. Broil for 3 minutes, or until cheese bubbles. Serve hot with sour cream for dipping.

VARIATION: Spice up these snacks even more by adding 1 tablespoon salsa to each potato in step 3.
