1 tbl vegetable oil
8 oz okra sliced
1 cup frozen whole kernel corn
1 lrg onion chopped
1 med green, red or yellow bell pepper chopped
3 lrg tomatoes seeded, chopped
1 can black-eyed peas - (15 to 16 oz) rinsed, drained
2 tsp chopped fresh thyme leaves
(or 1/2 tspn dried thyme)
2 tsp chopped fresh oregano leaves
(or 1/2 tspn dried oregano)
1/2 tsp salt
1/2 tsp paprika
Instructions:
Instructions: Heat oil in 12-inch nonstick skillet or wok over medium-high heat. Add okra, frozen corn, onion and bell pepper; stir-fry 2 to 3 minutes or until crisp-tender.

Add remaining ingredients; stir-fry about 5 minutes or until hot.

This recipe yields 6 servings, about 1 cup each.
