Instructions: Bring a pan of water to a boil. Dip tomatoes in and slip off the skin. Dice the tomatoes. Sprinkle the chicken with part of the salt. Place in a large pot with a small amount of oil and cook @ 3/4 of the till done. Remove all juices from the pan. Add the squash, onion and tomatoes. Stir in the garlic, corn, peppers and seasoning. Cover and simmer about 15 minutes. Serve over cooked rice.
