Instructions: When ready to make soup, wash beans and place in large kettle. Cover with water; add salt and soda and soak mixture overnight. Next morning, drain beans. Add 2 quarts water and the ham bone or pork hock. Bring to a boil and simmer 2 hours. Add onion, tomatoes, lemon juice, salt and pepper. Continue simmering until thick and tender. Add remaining ingredients and simmer until done. Extra water may be needed.
