6 -8 rolls
Ingredients:
Amount Ingredient
Nori (dried seaweed)

1/2 cup sushi rice or medium-grain white rice
1/2 cup water
----------------- Dressing: ----------------
1/4 cup rice vinegar
2 tbl sugar
Pinch of salt
Fillings (choose only 3 or 4 of the following):
Mushrooms
Pickled ginger
Carrots
Cucumbers
Water chestnuts
Avocado
Scallions
Asparagus
Scrambled eggs
----------------- Peanut Dipping Sauce: ----------------
3 tbl peanut butter
2 tbl lime juice
1 tbl soy sauce
2 tbl fresh cilantro, minced
1 tbl toasted sesame oil
1/4 cup water
Instructions:
Instructions: Bring water and rice to boil. Cover, reduce heat and simmer 20 minutes.

Remove from heat and let stand 5 minutes. Mix dressing ingredients with hot rice until very sticky. Spread rice over a cookie sheet to cool. Whisk together peanut dipping sauce ingredients. Serve with sushi. Follow the steps for making the California Vegetarian Rolls.

Makes 6-8 rolls
