Ingredients:

250 gm Campanelle, (8oz)
2 tbl Olive oil
1 sm Onion, finely chopped
125 gm Creamery soft cheese, (4oz)
4 tbl Milk
Grated rind and juice of 1/2 lemon
2 tbl Freshly chopped chives
Salt and freshly ground black pepper
1 x 100 gram pac smoked salmon, cut into strips
Instructions:
Instructions: 1. Cook the pasta following instructions on the pack.

2. Meanwhile, heat the oil in a pan and cook the onion for 3-4 minutes, stirring occasionally.

3. Stir in the Creamery cheese, milk, lemon rind and juice, half the chives and seasoning to taste.

4. Add the cooked, drained pasta and salmon, mix well and heat through. Transfer to a warmed serving dish, sprinkle over the remaining chives and serve immediately with lemon wedges.

NOTES : This elegant pasta dish combines campanelle with luxurious smoked salmon, soft cheese and chives. Easy to make, it is a perfect dinner party dish, suitable for a first or main course.
