1 x Cold roast duck cut serving pieces
2 tbl Butter
1 med Onion chopped
2 tbl Flour
2 cup Condensed chicken consomme
Juice of 1 orange
Grated rind of 1 orange
1/4 cup Dry red wine
Salt to taste
Instructions:
Instructions: Melt butter and soften onion in it. Stir in the flour and brown it. Add consomme and simmer for 10 minutes. Add orange juice and grated rind, wine and duck pieces. Season to taste and simmer gently for 30 minutes.

This recipe yields 2 servings.
