Canadian Bacon Story During the war years, England had a shortage of pork. They imported side bacon from Canada, which is termed "Wilshire Sides" in England, and they smoked it. Canadian bacon then became famous due to this event. Over time the United States believed that Canadian Bacon was Smoked Back Bacon. Canadian Bacon has never been smoked in Canada (although some small Provincial providers do smoke this bacon). Today in the U.S. bacon from Canada is known as smoked back bacon. Our Canadian product is classified under USDA as Uncooked Canadian bacon and is Canadian #1 Tenderloin Peameal Bacon. Peameal Definition During the war years, yellow peas were ground up into meal. Canadian bacon was rolled in this meal. This ensured better curing, shelf life and avoided bacterial problems. Over the years, this tradition was changed to cornmeal, due to the availability of corn.
