Ingredients:

340 gm cannellini beans soaked overnight
2 tbl white wine vinegar
4 tbl ertra virgin olive oil
fresh herbs
Instructions:
Instructions: Rinse the soaked beans and cover with water.

Bring to the boil and simmer for about 1 hour or until tender.

Toss gently with the rest of the ingredients.

Serve warm or cold.

When I think of cannetlini beans I think of a big bowl of lovely thick italian soup with ripped up crusty bread and green peppery virgin olive oil on top. (qv creamy aubergine cannellini bean and ricotta soup)
