Instructions: Wash and peel all the vegetables and cut into julienne (fine strips).
Blanch them in boiling salted water then plunge them into ice cold water. Drain the vegetables well and dry on kitchen paper. Saute them lightly in the butter and season with salt and pepper. Stuff each pasta square with a quarter of the vegetable mixture and roll into a cannelloni shape. Wrap in cling film. To reheat place in a steamer for 56 minutes. To serve trim both ends and remove the clingfilm. You can use any mixture of vegetables and flavour them with various herbs and spices. As well as an accompaniment to a meat dish this can be served as vegetarian starter. Serves 4 Email this Recipe:
