Instructions: Scoop the pulp from the cantaloupes. Place in large bowl.
Add the sugar, orange juice, lime and lemon juices, coconut milk, vanilla, ginger, half-and-half and rum; mix well. Pour half of the mixture into a blender container. Process for 2 to 3 minutes or until smooth. Repeat with the remaining mixture. Pour into a large nonreactive bowl. Chill, covered for several hours. Ladle into teacups or soup bowls. Note: This is simply wonderful. I serve it in beautiful, dainty teacups at ladies luncheons and it makes a nice dessert soup served in half a cantaloupe. Email this Recipe:
