1/2 cup light brown sugar - (firmly packed) divided
1/2 cup shortening
1/2 tsp salt
1 cup all-purpose flour
2 lrg eggs lightly beaten
1 tsp vanilla extract
2 tbl all-purpose flour
1/2 tsp baking powder
1/2 cup flaked coconut
Instructions:
Instructions: Beat 1/2 cup brown sugar, shortening, and salt at medium speed with an electric mixer until creamy; gradually add 1 cup flour, beating until blended.

Press into bottom of a lightly greased 11- by 7-inch baking dish. Bake at 325 degrees for 20 minutes. Cool on wire rack.

Beat remaining 1 cup brown sugar, eggs, and vanilla at medium speed until well blended. Add 2 tablespoons flour and baking powder, beating until blended. Stir in coconut and pecans. Spread over crust.

Bake at 325 degrees for 25 minutes or until golden. Cool on wire rack. Cut into bars.

This recipe yields 2 dozen bar cookies.
