1 lb cape shark (dogfish) cut into 4 pieces
1 tsp salt
1/4 cup olive oil
3 x garlic cloves crushed
8 sprg coriander
6 tbl pureed tomato
2 tbl fresh citrus (lemon or lime) juice
1 tsp dried red chili peppers
Instructions:
Instructions: Rub salt well onto fish pieces. Use a small amount of oil to coat a shallow baking dish and place fish in baking dish. Heat the remaining oil in a skillet and gently fry the garlic. Add the coriander, followed in a few minutes by the pureed tomato and citrus juice. Stir to mix ingredients together.

Pour tomato-citrus sauce over the fish. Sprinkle the chili peppers over the fish and add water to the baking dish. Bake in an oven preheated to 425 degrees for 20 to 25 minutes.
