handful of basil leaves
15 gm flat parsley
1 tbl capers drained
1 x heaped tsp dijon mustard
4 x anchovy fillets
extra virgin olive oil
4 lrg (beef) tomatoes each cut in 4 slices
Instructions:
Instructions: Place half the basil leaves all the parsley the capers mustard and anchovies in a food processor and process until blended then add enough oil to give a thick pourable consistency about 4 tbsp.

Season to taste.

To assemble place the largest tomato slice on the base top with cheese season well then place a basil leaf on top.

Continue the layers using 4 tomato slices and 3 cheese slices per person.

Spoon over some parsley salsa and serve with italian bread.
