Instructions: Start the yeast culture off by mixing the honey, water and yeast. Meanwhile put the chestnuts into a pan add the spirits
(liquor I think you say in the US of A) and cover with a little water. Bring this to the boil and simmer with a lid on until the chestnuts are soft (Too much boiling turns everything to a mush). Mix the flour, salt and honey into the bowl with a dash of olive oil. When the chestnuts are soft drain the liquid into the flour mixture and mix quickly (or if you are patient you could wait for it to cool- I find it doesnt really matter). Chop up the chestnuts into little bits and add to the flour. Mix it all up, add the yeast and begin the knead. Keep going all the way and let the dough rest 2 or three times. Knock down at least twice and then split into your favorite tins (I use 3 small 5x2x3 tins). Place in the oven at 400 + and cook until golden brown. Turn out onto the wire rack and if you can wait that long ;) let the bread cool. I cant really tell you what to do here as ours never lasts that long!
