Instructions: 1. Preheat oven to 350F.
2. With hand mixer: In a large bowl, cream together the shortening and sugar until light and fluffy. Add the vanilla and buttermilk. Whip to combine. Add pinch of salt, cinnamon and egg white powder. Whip just to combine. 3. By hand: Add Bisquick and oats to the butter mixture. Stir to combine. Add nuts and raisins. Stir to combine. Drop by rounded spoonfuls onto nonstick cookie sheet. (12 to 14 cookies). 4. Bake for 10 to 12 minutes in the preheated oven until golden dry. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Description: "Absolutely Excellent Oatmeal Cookies" NOTES : I found this recipe at AllRecipes. It was called "Absolutely Excellent Oatmeal Cookies" and got rave reviews. It was submitted by Marylou: "These are chewy, healthy oatmeal cookies which can be prepared in a number of variations, just add nuts, raisins, chocolate chips, coconut, candied fruit or any other additions." I wanted a small batch oatmeal raisin cookie that wasnt too sinful and tweaked the recipe as it appears here. Excellent! The cookie was "caramelly" without being too sweet. The vanilla is the key!
