1 cup Chopped caramelized onions, cooled, about 3 cups uncooked
1/8 tsp Salt
1/8 tsp Pepper
1/8 tsp Ground nutmeg
2 lrg Eggs
2 lrg Egg whites
12 oz Evaporated skim milk
Instructions:
Instructions: 1. Preheat oven to 325 F.

2. Combine all ingredients except cooking spray in a large bowl. Spoon onion mixture into 6 (6-ounce) custard cups coated with cooking spray.

Place the custard cups in a 13 x 9-inch baking pan; add hot water to pan to a depth of 1 inch. Bake at 325 F for 1 hour or until a knife inserted in center comes out clean.

Yield: 6 servings.

Notes: These savory custards are ideal accompaniments to beef, lamb, or game.
