Instructions: L. Preheat oven to 400F.
2. Heat the olive oil in a large nonstick skillet over medium-low heat. Add the sliced onion and shallots, and cook 25 minutes or until onion and shallots are golden brown, stirring frequently. Add the Mango-Papaya Vinegar, dried thyme, salt, and pepper, and saute for 5 minutes. Arrange the caramelized onions over focaccia, and bake at 400F for 8 minutes or until thoroughly heated. Cut focaccia into wedges. Yield: 4 servings. MANGO-PAPAYA Vinegar: Rice wine vinegar with mint, ginger and fruit.
