Instructions: Peel the plantains and cut in half crosswise. Cut each half lengthwise into 1/16 th inch-thick slices. Heat the oil in a large saucepan to 325 degrees over high heat, then reduce it to low to maintain a hot frying temperature.
Fry the plantain slices, 4 or 5 at a time, for 1 1/2 to 2 minutes. Remove them from the oil with a slotted spoon and drain on paper towels or a flattened paper bag. Sprinkle the granulated sugar in a saute pan and place over high heat. Allow the sugar to melt and caramelize, stirring once or twice, until it turns a light amber color. Allow the caramel to cool for 1 minute and then use a spoon to drizzle it over the plantain curls. Sprinkle with powdered sugar. Store in an airtight container. Email this Recipe:
